Making Fermented Fruit Soda

Fruit soda or fruit kvass is very easy to make and is a healthy refreshment! 


Simply fill a 1 liter jar with fruit, add 2 tablespoons of honey and top it up with water.

Cover the lid lightly and stir 3-4 times a day.

Depending on the temperature, in a day or two, you’ll see the bubbles on top which are the yeast.

Basically the yeast on the fruit feed on the sweet water and multiply.As they eat sugars,they produce gas! By stirring often, we mix the fruit so it doesn’t get moldy, and help to distribute the yeast, so they work evenly.




Making Fermented Fruit Soda


  • Handful of fruit

  • 2 tablespoons honey

  • 1 liter water


  • Gather a bowl of fruit and place it in a 1 liter jar . You can also add herbs like chamomile,lemon balm,mint etc.

  • Fill the jar with water 

  • Add 2 tablespoons of honey and dissolve it by stirring

  • Cover the lid lightly and stir 2-3 times a day.

  • Once you see the bubbles on top, strain with a cheese cloth and bottle it (to avoid explosions , use flip top bottles,repurposed beer bottles or plastic soda bottles)

  • Leave the bottle on the counter for carbonation to build up.Check it every now and then by lightly unscrewing the lid.If there's a fssss sound it's done.If there isn't, leave it a little more.

    Keep it in the refrigerator and drink it up in a 1 week.
