Fermented Sodas

Fermented sodas that I made with wild plants while I was living in the Aegean coast of Turkey.

In the cool of the morning, I gathered chicory flowers, fresh pine needles, dandelion flowers, chasteberries . With the use of wild yeasts as well as ginger bug, fruit sugar and some lemons, I turned the wild flora into sodas!

I called them Gündüz Düşü (Morning Dream) and made bottles of them for a local restaurant.
