Dividing Sunchokes (Helianthus tuberosus)

Last year I planted half a kilo of sunchokes on the edges of my vegetable garden. They grew abundantly, we made pickles with them and left some on the ground for the next season.

They all sprouted in May. Since I don’t want them to take over the vegetable garden, I uprooted some of them and planted on the empty spots of the garden.

Many people are find sunchokes very invasive, but it’s a wonderful vegetable that doesn’t really need any attention and comes back every year with abundance!
